So on that note, may I present the famous sloppy lentils. I'm teaching my daughter how to grocery shop and cook this summer and this was a recipe that she found and we tweaked it to make easier and it is as awesome as it looks. Goes great with sweet potatoes, by the way!!
Sloppy Lentils
Ingredients
2 tsp olive oil
1 onion diced
2 garlic cloves
1 cup of lentils, rinsed
2 cups vegetable broth
1 15-oz can of tomato sauce
1 Tbs brown sugar
2 Tbs of Memphis-style BBQ sauce
1 Tbs of soy sauce
1 small can of tomato paste
garlic salt, cayenne pepper, salt, and pepper to taste
hamburger rolls
Instructions
1. Heat oil over medium heat and add onion, garlic, salt, and pepper. Caramelize for about 15 minutes.
2. Next, add lentils and broth and bring to a boil. Reduce heat to a "soft" boil and cover and cook for 20 minutes, until lentils are tender, but not mushy.
3. Stir in tomato sauce, brown sugar, BBQ sauce, soy sauce, tomato paste, garlic salt, cayenne pepper and bring to a boil.
4. Cook until sauce has thickened, for about 10-15 minutes, stirring frequently.
5. Taste and add more salt or pepper, if needed, and serve on bun.
