Huevos Rancheros Verdes

Ok, I added a really crappy cell phone picture because my good camera paraphernalia  is still in boxes all over the place.  I'm slowly getting the house together, this takes time (:

This is a very simple, cheap, healthy, and delicious dinner.  I love sunny-side-up eggs beyond belief so getting to eat them with dinner is a real plus for me.  To note, you could make this with corn tortillas but I use the low carb, high fiber flour tortillas.  I like the flavor better and they are healthier.  Also, use whatever roughage you like.  I'm really into eating a rainbow of veggies each day so I like the lettuce mixtures with a variety of color and texture.  This makes 3 servings.

Ingredients
2 cups of lettuce
3 green onions, sliced
2 tablespoons of chopped fresh cilantro
2 teaspoons canola oil
2 teaspoons of lime juice
1 15-oz can of pinto beans, rinsed
1/2 cup of salsa verde
4 flour tortillas
cooking spray
3/4 cup shredded Monterrey Jack cheese
6 large eggs 
salt and pepper to taste

1.  Preheat oven to 400° F.
2.  Combine oil, lime juice, salt and pepper, green onions, and cilantro in a small bowl.  Pour over lettuce and toss to combine.  Put in refrigerator.
3.  Combine beans and salsa in another bowl. 
4.  Coat both sides of tortilla with cooking spray, place on baking sheet, and let the tortillas get golden brown in the oven for about 3-5 minutes on each side.  (Sometimes I skip this step which results in the tortillas having crispy edges and soft middles, which is also good.  It just depends on my mood and the amount of time I have.)
5.  Remove tortillas from the oven and arrange in an overlapping manner.  Spread the bean mixture on top of tortillas and sprinkle with cheese.  Bake for about 10 minutes until cheese is melted.
6.  While the tortillas and beans are in the oven, heat a large nonstick skillet over medium heat.  Crack eggs in a small bowl and place them in pan carefully so you don't break the yolk.  Season with salt and pepper.  Reduce heat to medium-low and watch until eggs are cooked to your liking.  (I love them sunny-side-up so you can dip the tortillas in them.) 
7.  Cut tortillas covered with beans into 3 servings and transfer to a plate.  To assemble, top with lettuce mixture and eggs.

Spicy Broccoli and Tofu Stir Fry with Cashews

I have a secret.  I hate stir fry.  I know........shocking.  BUT I make it anyway because its so convenient to grab a frozen bag of veggies and make some instant rice yet I always eat this catastrophe with despair.

......Until I came upon this little gem.  I totally forgot to take pics but this is definitely one of my favorite meals to make and eat.  Even the kid likes it!  Bonus is this recipe is low carb and meat free.



Spicy Broccoli and Tofu Stir Fry with Cashews

Box of whole wheat vermicelli noodles (you could also use rice)
1/2 cup of soy sauce
1/3 cup of seasoned rice vinegar
1 inch grated fresh ginger root
2 minced garlic cloves
1 package of cubed tofu
vegetable oil
sesame oil
2 heads of broccoli; florets only
1/2 Vidalia onion, minced
1 minced jalapeno (you can remove seeds if you don't want it too spicy, but I leave them in)
1/2 cup cashews




1. Combine soy sauce, seasoned rice vinegar, grated ginger, and minced garlic in a large bowl.  Add tofu cubes stirringly gently to coat.  Let marinate for 15 minutes.
2.  Remove tofu from bowl, reserving marinade.  Heat 2 tablespoons of vegetable oil and 1 teaspoon of sesame oil in non-stick skillet over medium-high heat.  Add tofu and cook till golden.  Remove and place on paper towel to drain. 
3.  Cook vermicelli according to directions.
4.  In a large wok, heat 3 tablespoons of vegetable oil and 1 tablespoon of sesame oil on medium-high heat.  Add broccoli florets, onion, and jalapeno and saute until broccoli is colorful and somewhat tender but not limp.  Stir in reserved marinade, tofu, and cashews. 
5.  Serve over vermicelli.
